Conference Meals

The Riley Center’s dedicated caterer will provide delicious meals for breakfast, lunch and dinner at a reasonable price. There will be limited time to leave the facility for lunch, so it is recommended that, at a minimum, you choose the lunch meal plan or bring a sack lunch. 

You may choose the Full Meal Plan, which includes 3 hot buffet breakfasts (Thur, Fri and Sat), 2 box lunches (Thur and Fri), and 3 dinner buffets (Wed, Thur and Fri). 

Or you may choose one or more of the smaller plans that include either all breakfasts, all lunches, or all dinners. There will be a discount of $30 for the Full Meal Plan compared to smaller plans.

or you may choose one or more of the smaller packages:
Breakfast-Only plan (3 meals)           $ 45
Lunch-Only plan (2 meals)                $ 30
Dinner-Only plan (3 meals)               $ 85

Meal Descriptions

Wed, June 5
Dinner -- Chuck Wagon BBQ Buffet 
Texas style beef brisket and BBQ chicken leg quarters served with slow baked beans, green beans, graham cornbread and choice of coleslaw or garden salad.

Thur, June 6
Breakfast -- Wake Up Call Hot Buffet 
           Fresh sliced fruit platter, assorted breakfast pastries, fresh scrambled eggs with Wisconsin 
           cheddar, sausage, crisp bacon, and home-fried potatoes.

Lunch -- choice of box lunch
  • Option 1 - Chef Salad
           Mixed greens with Julienne Ham, Smoked Turkey, Cheddar Cheese, Swiss Cheese, Tomato  
           Wedges, Boiled Eggs, & Croutons served with choice of Ranch or Italian Dressing, & Banana Bread.  
  • Option 2 - Vegetarian Wrap
           Sundried Tomato Tortilla filled with Shredded Cheese, Black Olives, Diced Tomatoes, Baby Corn, 
           Green Onion, served with Dijon Mustard, Whole Fruit, Potato Chips, and a Homemade Cookie.
  • Option 3 - Deli Ham Sandwich
           Honey Ham and Cheddar on Wheat bread served with Lettuce, Tomato, Onion, Pickles, Whole 
           Fruit, Potato Chips, and a Homemade Cookie.

Dinner -- Santa Fe Fajita Buffet
            Tri-colored Chips and Queso, Beef, Chicken and Mixed Vegetable Fajitas with Hot Tortillas, Black 
            Beans, and Spanish Rice, served with sides of Pico de Gallo, Sour Cream, Lettuce, and Shredded 
            Cheese.

Fri, June 7
Breakfast -- Wake Up Call Hot Buffet 
           Fresh sliced fruit platter, assorted breakfast pastries, fresh scrambled eggs with Wisconsin 
           cheddar, sausage, crisp bacon, and home-fried potatoes.

Lunch -- choice of box lunch
  • Option 1 - Grilled Chicken Caesar Salad
            Crisp Romaine Lettuce topped with Grilled Chicken Breast, Toasted Croutons, Lemon Wedge,       
            and Parmesan Cheese,  served with Creamy Caesar Dressing and Banana Bread.
  • Option 2 - California Club Wrap
            Jumbo Tortilla filled with Roasted Turkey, Crumbled Bacon, Shredded Lettuce, Tomato, Cheddar 
            Cheese, Avocado & Pesto Spread, served with Whole Fruit, Potato Chips, and a Homemade 
            Cookie.​
  • Option 3 - Deli Ham Sandwich
            Honey Ham and Cheddar on Wheat bread served with Lettuce, Tomato, Onion, Pickles, Whole 
            Fruit, Potato Chips, and a Homemade Cookie.

Dinner - Mixed Grill Buffet
           Savory Beef Tips in a Brown Sauce, Tuscany Shrimp with Peppers and Tomatoes, Steamed Rice, 
           and Grilled Root Vegetables.

Sat, June 8
Breakfast - Breakfast Chef Hot Buffet 
            Fresh fruit platter, golden french toast with blueberry compote and yogurt topping, fresh 
            scrambled eggs, grilled ham steaks, crisp bacon, and golden hash browns.
